Prized for its depth of flavor
and aroma, Cabernet Sauvignon is the king of red grapes. It’s most
famous in the Medoc region of Bordeaux and fast becoming as famous
in Napa Valley. Cabernet grapes produce wines that astonish with
their intensity and complexity, offering layer upon layer of rich
tastes and aromas, among them violet, black currant, cedar, and
leather. They're almost always aged in oak for one to two years,
and should be allowed to age in the bottle for some time. Styles
differ across regions. California Cabs tend to have more intense
fruits and Cabernet grapes from the central area around Oakville
and Rutherford particularly produce classic, complex, and
long-lived wines. Taste the difference in winemaking and the
winemakers’ styles.
Best paired with rich meats
like steak, lamb and goose. Cab is also the perfect companion to
cheeses like Manchego, Parmesan and aged cheddar and Gouda. |
